Zucchini and Roasted Cauliflower Hummus

Sesame-free, Chickpea-free, this is a great alternative to hummus using super easy ingredients.

INGREDIENTS

2 small zucchini, unpeeled

1/2 cup roasted cauliflower "rice"

1/4 cup tahini 

1/2 lemon, juiced

3 cloves fresh garlic

2 tbsp olive oil

salt and pepper to taste

DIRECTIONS:

Coat cauliflower "rice" (it's literally just cauliflower that's been pulsed in a food processor until it's the size of rice) lightly with oil and roast in a 350(F) oven until it's golden brown and smells awesome, set aside to cool. 


Cut zucchini into chunks.

Throw all the ingredients in a food processor and blitz until it's creamy.  


Serve with pita or cut veggies.
