Soaked Sunflower Seed Garlic Dip
Chickpea and sesame free, this is a great alternative to hummus for a party or a snack. It works great as a spread for sandwiches too!
1 1/2 cups of raw sunflower seeds, soaked overnight
1tbsp avocado oil (or olive oil)
1 tsp apple cider vinegar
2 cloves fresh garlic (minced)
Salt and pepper to taste
Optional Garnish Ideas:
Pomegranate seeds to garnish
Fresh parsley to garnish
A squeeze of fresh lemon juice to serve
Drain any excess liquid from the sunflower seeds (reserve approximately a tbsp)
Combine sunflower seeds and reserved liquid, vinegar, garlic, salt and pepper in food processor or blender, drizzling in oil until a paste is formed (should be the texture of hummus)
Transfer to your serving dish and sprinkle with garnishes.
