Egg Free Mama
This is one of my favourite dairy-free cheese to make. It spreads and melts, is delicious on crackers or in a grilled cheese sandwich. We've even used it for quesadillas.
1/2 cup raw shelled hemp seeds (you can also use sunflower seeds or a combo of both)
1 can full fat coconut milk
2 tbsp agar agar (you can add more for a firmer cheese)
2 tbsp tapioca flour
1/8 cup nutritional yeast (more to taste)
1 tsp salt
1 tbsp lemon juice
1 tsp garlic powder (optional)
Blend the hempseed and 1 tsp of coconut oil in a blender until a paste is formed
Whisk all ingredients together in a sauce pan so no lumps form, then switch to a wooden spoon or spatula.
Stir constantly until you get a melted cheese texture, approximately 5-6 minutes
Pour QUICKLY into the prepared cheese molds (I spray glass tupperware with coconut oil but use whatever shaped dish you like, just remember to oil it!)
Chill in the fridge overnight, then creep in in the morning and snack while everyone else is sleeping :)
