Grandma's No Bake Macaroons
These are the ultimate top 8 allergen free cookie that you can easily add into your repertoire with very little adjustments to ingredients you are likely already used to. If you have somebody in your life who is gluten-free or vegan, these little sweeties are easy and pack a big punch. They are a great addition to any cookie tin or table :)
3 cups quick oats (look for certified gf oats)
1 cup unsweetened flaked coconut
2 cups granulated or cane sugar
1/2 unsweetened cocoa powder
1/2 vegan butter of choice (or margarine if that's a safe option for you)
1/2 dairy-free milk of choice (rice or oat milk are great nut-free options here)
Combine oats and coconut in a large bowl and set aside.
In a medium sauce pan, melt vegan butter. Add sugar, cocoa powder, and dairy free milk.
Mix until smooth, then increase temperature. Bring to a boil and cook 2 minutes, stirring constantly.
Pour chocolate mixture over the oat mixture and stir quickly to combine.
Using a cookie scoop or tablespoon, drop onto parchment paper and refrigerate at least an hour until set.
