Easy Egg-Free Scramble

This is a great option if you have former egg-eaters in your home. We use this scramble for brunches, on toast, and in breakfast sandwiches and wraps. It's also a great and easy dinner, and can be adapted in tons of way. Your imagination is your only limit!


INGREDIENTS

1 block firm tofu, removed from brine and dried on papertowel

1 small onion, diced

1 small bell pepper diced

1 cup cherry tomatoes, halved

1/4 cup nutritional yeast

1 tsp tumeric

1/2 tsp garlic powder

pinch of black salt (if you can find it)

regular salt and pepper to taste


*you can add what you like to this--I have used leftover greens, vegan cheese, the veggies from last night, even turkey bacon and sausage.


In a non-stick pan, warm the onions and peppers in oil on medium heat until glistening. Add turmeric, garlic powder, and any spices you are using to toast while the veggies cook.


Crumble your tofu so that it resembles a scrambled egg and add to the pan, stirring until everything is combined. Add nutritional yeast.


Salt and pepper to taste as needed and finish with black salt (this is less salty but gives a eggy smell to the mixture...totally optional)


Serve warm.
