These are super easy cookies that can be adapted to gluten-free if wheat is an allergen for you.
Preheat oven to 350F
Ingredients:
Wet:
3/4 cup melted coconut oil
3/4 cup granulated sugar
1/2 cup applesauce (unsweetened)
2 tsp vanilla
Combine wet ingredients and set aside.
Dry:
1 cup whole wheat flour
2 1/2 cup all-purpose flour
*or 3 1/2 cups 1:1 gluten-free flour*
1/4 cup cocoa powder
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1/2 pkg chocolate chips
Combine dry ingredients.
Mix and combine wet and dry ingredients. Drop by teaspoon on parchment paper lined cookie sheet and bake approximately 10 mins.
*I like to save half of my dough and freeze it for a later day. It freezes really well, and make individual pucks so you can bake them one at a time! Yum!
