Buckwheat Pancakes with Apple Cider Vinegar
I always save my dry ingredients for an easy pancake mix, so make extra!
1 cup raw buckwheat flour
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
2 tbs date sugar or granulated sugar
Combine dry ingredients (if you are making extra, take half and place in a freezer safe container. I like to write the instructions on the side, for future reference)
1/2 can coconut cream (or full fat coconut milk)
1/4 cup water (more or less to achieve consistency)
1 tbsp apple cider vinegar
1 tbsp almond butter
Whisk together the wet ingredients except the water.
Combine the wet and dry ingredients and then add water slowly until the batter is the consistency of, well, pancake batter.
Scoop the desired amount onto a hot griddle (I cook mine in coconut oil but any vegan oil will work) until golden and crispy.
